Low Carb Cheesy Meatballs
Our idea of a ‘spaghetti’ type dinner has changed over the years. We probably replaced pasta with sliced or spiralized vegetables somewhere around 4 years ago. We moved through to making a really heavy pasta sauce that was loaded with vegetables and chopped, grilled chicken after that. Its really great stuff!
So the concept of keto (low carb) pasta dishes was no different than what we’ve been doing for years. The one thing that we’ve recently added was a meatball. Not that this should be rocket science, but I’d never used anything but breadcrumbs in meatloaf or meatballs to make it less dense. Initially, when trying out a low carb meatloaf recipe I added almond flour in place of the bread crumbs, and that works, but I’ve recently stumbled across so many recipes utilizing cheese that I was intrigued with this super simple meatball recipe.
We use these little guys for ‘pasta’ dishes but they also make for great little fat and protein snacks.
Ingredients
- 1 lb ground meat (beef, venison, pork, whatever)
- 1 lb breakfast sausage
- 3 eggs
- 1 c mozzarella cheese
- 1 c italian cheese blend
- 1 Tbsp minced ground garlic
- 1/4 - 1/2 tsp red pepper flakes
- salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Mix all ingredients in large mixing bowl.
- Use a large cookie scoop to make meatballs. Place on broiler pan. These will not spread out so they can be placed close together.
- Cook in the oven for 15-20 minutes.
These are ridiculously simple to make. I will be trying this recipe out as a meatloaf in the very near future (adding onions and bell peppers and such) but for our purposes at this point it worked great!
